How I Brewed It

70-85C for 2 mins.

From my original Amazon review:

The most important thing to know about this tea is that the brewing instructions on the package are incorrect. It suggests using 100C water. My photo shows a brew made at this exact temperature; while the colour looks fine, the flavour was bitter and it destroyed the tea's nuances. For the best results, use water in the 70-85C range instead. I found 80C for two minutes was optimal.

Despite the "premium" label, this is a standard, mid-range White Peony at a reasonable price. When brewed correctly, the tea has a pleasant floral and slightly vegetal character. A subtle sweetness and a hint of fruitiness run through the infusion, follows with a standout aftertaste. It has a notable 'Hui Gan', leaving a sweet, honey-like finish that lingers for quite some time.

The dry leaves are a mix of whole sets and broken pieces, which is typical for a tea at this price point. It's a solid 4 stars, but only if you brew it correctly.
