80C with electric frother.
From my original Amazon review:
At £24.90, this YEDOENSIS matcha sits firmly in the premium range on Amazon, but with a welcome twist: you get 40g instead of the usual 30g. I believe this larger size points to a direct import, as 40g tins are a standard for personal consumption in Japan. It’s a thoughtful touch that hints at the product's authenticity.
The matcha arrived in a sealed foil pouch inside the tin, ensuring maximum freshness, and it certainly showed. Upon opening, the powder is a lovely deep spring green. It's extremely fine, with the small clumps that are actually a good sign of a high-grade, statically charged powder.
Visually, it passes every test with flying colours. When whisked, it produces an excellent, stable froth and maintains its rich green hue.
For the taste test, I prepared it as usucha using water at around 80C and an electric frother. The initial sip opens with a distinctively earthy and rustic character. This quickly mellows out, smoothing into a creamy, subtle sweetness with a very clean finish that immediately makes you want another sip.
Having tried other premium matchas from Amazon, this one definitely stands out with its unique taste profile. It wasn't an absolute "wow" for me, but its character is undeniable. If you're looking for something a bit different from the fantastic, classic Uji matchas and appreciate genuine quality, I would certainly recommend this. That extra 10g is a brilliant bonus value, not a compromise on quality. A solid 4 stars.
