My Experience

I picked this up knowing it was sold as a "topper" and not fresh, authentic kimchi, but even with those adjusted expectations, it was a struggle to get through.

To be fair, it starts with a decent initial kick. There is a genuine tanginess and spice when it hits your tongue, and the crunch from the mustard leaf stems is actually quite satisfying. If you just had one tiny bite, you might think it was okay.

But that is where the enjoyment ends. After a few pieces, I found I physically couldn't eat any more. My brain just rejected it, and looking at the ingredients, I realised why: it is packed with sugar. Sugar, corn syrup, and thickeners appear multiple times in the list, creating a cloying, jammy sweetness that causes instant palate fatigue.

As you can see in my photo, the sauce is thick, glossy, and gloopy. It looks and behaves more like a sweet chilli glaze or ketchup than a proper kimchi brine. Because it relies on vinegar, paprika, and generic red chilli rather than natural fermentation and Korean Gochugaru, the spice profile feels "heavy" and muddy rather than fresh and clean.

It feels like a confused product. It’s too sweet and artificial to satisfy a kimchi craving, but the flavour profile is a bit too odd to work as a standard pickle.
